New Year's meat rolls: replacing main courses


 

Some hostesses are limited to sliced ​​meat for a snack, devoting all their energy to preparing second courses. And some people prefer to cook snacks that can easily replace any other. Our recipe today is just such a dish!

 

Chicken roll with pumpkin

 

Ingredients

 

  • 400 g of chicken
  •  

  • 200 g of pumpkin
  •  

  • 2 tooth. garlic
  •  

  • 100 ml of broth
  •  

  • 50 ml of sunflower oil
  •  

  • salt to taste
  •  

  • ground black pepper to taste
  •  

  • Provencal herbs to taste
  •  

Preparation

 

 
 

  1. Peel the pulp of the pumpkin, cut into thin slices and boil until cooked. Divide the chicken fillet into three equal layers. Cover them with cling film and beat off with a hammer.

  3. Put the beaten-off chicken layers one after the other on a film-lined board. Salt and pepper them, sprinkle with Provencal herbs. Spread the pumpkin slices evenly.
  4.  

  5. In turn, grease the pumpkin with oil, also salt, pepper and sprinkle with chopped garlic. Using a film, roll the chicken into a roll. Fix it with a thread, as it suits you.

  7. Fry the roll on all sides with hot oil. Next, put it in a form with broth and bake the dish in a preheated oven to 180 degrees for half an hour. Serve chilled.

Chicken roll with prunes

 

Ingredients

 

  • 2 chicken breasts
  •  

  • 100 g of prunes
  •  

  • 2 apples
  •  

  • 2 art. l butter
  •  

  • paprika to taste
  •  

  • thyme to taste
  •  

  • salt to taste
  •  

Preparation

 

  1. Mix paprika, salt and thyme with melted butter. Divide the chicken breasts into 4 thin layers, and cover them with cling film and beat off with a hammer.

  3. Pour prunes with boiling water, leave to swell for 10 minutes. Put the beaten filet out on a film-lined board. Lubricate the meat with paprika marinade.
  4.  

  5. On top of the filet, in thin rows at intervals, lay thin apple slices, and between them — swollen prunes. Using a film, gently wrap the chicken in a roll.
  6.  

  7. Wrap and fix the roll with thread, put it on a greased baking sheet and coat with marinade. Bake for half an hour at 180 degrees.

Pork roll with dried apricots and figs

 

Ingredients

 

  • 500 g pork tenderloin
  •  

  • 10 pcs. dried apricots
  •  

  • 6 pcs. dried figs
  •  

  • 1 art. l rosemary
  •  

  • 1 art. l Ginger
  •  

  • 1 art. l lemon juice
  •  

  • 20 g of honey
  •  

  • salt to taste
  •  

  • ground black pepper to taste
  •  

Preparation

 

  1. Peel the ginger root and grate it on a medium grater. Mix it with honey, rosemary and lemon juice. Add salt and pepper to the mixture. Shuffle everything.
  2.  

  3. Cut the pork tenderloin so that a long thin layer is obtained. On a cutting board lined with cling film, put a couple of spoons of marinade. Flatten it on the surface.
  4.  

  5. Put the pork layer on top of the marinade. Grease it with marinade too. Wrap the pork in a roll, wrap in a film and leave to marinate in the refrigerator for an hour.
  6.  

  7. Meanwhile, pour dried apricots and ginger with boiling water, leave to swell. When the pork is marinated, lay the dried fruits on the meat alternately. Roll the roll again.
  8.  

  9. Roll up and fix the roll with a thread, put on a baking sheet. Bake the dish for 35 minutes at 200 degrees. Serve chilled.
  10.
